Ingredients: 2 tbls good evo, and a little more for drizzlling 6 oz. of hot Italian sausage 1/2 cup chopped onion 1 can (15.5 oz.) cannellini beans 1 can (10 oz.) boiled small clams 1 small bunch (8-10 oz.) brocollini 2 tsp. chopped garlic 1/8 tsp.red pepper flakes salt to taste good grated parmesean

Directions:- Pour oil into large skillet and add small bite size pieces of sausage cook on high for a minute add onion for another 2/3 minutes, while turning sausage. Add liquid from beans and bring to a boil. - Meanwhile, wash and cut broccolini tops into 1inch pieces and the stems into 1/2 inch pieces. Add to the pan with red pepper flakes, garlic and the juice from the clams; return to boil,Cover and boil for 4+/- minuets or until broccolini is tender but still a little crunchy. - Add the beans and clams, mix well and return to boil, just long enough to combine flavors together. Taste and add salt if needed. Serve with a grate of parm. and a light drizzle of evo. |
