4 tbsp. olive oil
1/4 cup chopped onions
3 medium red peppers, diced
4 tbsp. flour
1 1/2 cups chicken stock
2 cups monterey jack cheese
1/2 cup parmesan cheese
salt & pepper to taste
2 tsp. chopped garlic
1/2 cup milk
1 lb. macaroni, cooked al dente
1 cup sharp cheddar cheese
1/2 cup breadcrumbs

Directions:
Heat 2 tbsp. oil, sauté onions for 1 minute. Add salt & pepper, red peppers, and garlic. Add remaining oil and the flour to make a roux. Add milk and 1 cup of stock and bring to a boil. Simmer 6 minutes. Add stock to desired thickness. Combine pasta and cheeses with rest of ingredients.

Pour into greased 9x12 glass casserole dish. Sprinkle with breadcrumbs & parmesan cheese. Bake at 350ºF for 15-20 minutes until bubbly and browned. Makes 1 large casserole.
