salmon steak or filet
mayonnaise
Hawaiian salt
onion

Rinse fish, making sure all scales are removed. Place into a microwavable dish. Smear all sides with mayonnaise. Sprinkle with chopped onion, salt, and pepper.

Cover tightly and bake in conventional oven at 325ºF for about 20 minutes or microwave on high about 15 minutes, depending on thickness. Do not overcook. Garnish with chopped green onion and/or fresh herbs (cilantro, oregano, basil)

Variations:
- If you like wine, you can pour around 1/4 cup before baking.
- Furikake, toasted sesame seed, or chopped toasted macadamia nuts add a crunchy topping.
- Chopped olives, capers, pickled onion add a delicious tang. (You can add the pickling juice of the capers or onions to the mayo - consider reducing the salt)
