2 lbs lean veal cut 1/2" thick
1 tsp salt
1/4 tsp pepper
1/2 c flour
1 egg beaten with 2 tbsp. milk
1/2 c fine dry bread crumbs
1/4 c butter or margarine

Directions:
Directions:
Wipe the meat with a clean damp cloth. Cut into serving pieces. Mix the salt and pepper with the flour. Put the flour mixture in one bowl and the egg and milk in another and the bread crumbs in a soup plate. Heat butter or margarine to bubbling in a frying pan. Dip each piece of veal first into flour then into egg, then into the bread crumbs. Brown in the fat turning the meat several times. The meat is done when the pieces are golden or have been cooked about 10 min on each side.
