5 lb (approximately) fresh pig tails
2 apples
1 medium onion (or 2 small)
1 pint beet
1/2 c chopped celery
1 tbsp. soy sauce (optional)
1 heaping tbsp. salt
1 heaping tsp pepper
1/2 tsp each marjoram and sage
1 c (approximately) barbecue sauce

Wash tails and pat dry with paper towel. Trim off excess fat if desired. Place in large kettle or soup pot and barely cover with water. Add pint of beer. Cut applies into quarters and onions into large chunks. Add all other ingredients, bring to boil and simmer (covered) for at least 45 min , no more than 1 hours. Remove tails into baking pan or roaster. Cover with barbecue sauce and bake at 350ºF for one hour or broil turning frequently and basting with barbecue sauce.
