SUGAR COOKIES:
3/4 c. sugar
1 c. lard (buy in the ethnic food section of your grocery store)
2 tsp. vanilla extract
1/2 tsp. almond extract
2 eggs
3 c. flour (GF)
1 1/2 tsp xanthan gum
2 1/2 tsp baking powder
1/2 tsp salt
2 T. orange juice

VANILLA FROSTING:
1/2 c. salted butter (at room temperature)
3 c. powdered sugar
2/3 tsp. vanilla extract
3 - 3 1/2 T. half and half
red food coloring (optional)

Preheat oven to 375º (350º for convection)

In large mixer bowl, cream lard and sugar together. Beat until fluffy. Add eggs one at a time and vanilla/almond extracts. Beat well together.

Meanwhile, sift flour, xanthan, baking power, and salt together. Gradually add flour mix and orange juice to lard mix. Beat together.

Turn out onto a large sheet of plastic wrap. Press together into a large thick flat disk about the diameter of a dinner plate. Place this into the refrigerator to chill for about 1/2 hour or longer.

Once chilled and fairly firm, sprinkle slightly with gf flour and roll out to 3/16" (slightly less than 1/4") with a rolling pin. Cut into rounds with a cookie cutter or biscuit cutter.

Place on cookie sheet lined with parchment paper and bake for 10-12 minutes. Let cool completely and then frost with the following frosting:

VANILLA FROSTING:
Combine all frosting ingredients (start with only 2 1/2 T. of half and half and work up to 3 T only if needed) in a large electric mixer bowl. Whip until frosting is smooth and fluffy. Mix in enough food coloring until it is a nice pink color. Add additional half and half if needed to get to a smooth and fluffy consistency. Frost the tops of the cookies only when they are completely cool. Can add sprinkles to the top if you like.
