1/2 c. sugar
1 c. lard (buy in the ethnic food section of your grocery store)
1 1/2 tsp. anise seed
2 eggs
3 c. flour (GF)
1 1/2 tsp xanthan gum
2 1/2 tsp baking powder
1/2 tsp salt
2 T. orange juice
For Sugar Topping:
1/4 c sugar
3/4 tsp cinnamon

Preheat oven to 375º

In large mixer bowl, cream lard and sugar together. Beat until fluffy. Add eggs one at a time and anise seed, beat well together.

Meanwhile, sift flour, xanthan, baking power, and salt together. Gradually add flour mix and orange juice to lard mix. Beat together.

Turn out onto a large sheet of plastic wrap. Press together into a large thick flat disk about the diamater of a dinner plate. Place this into the refrigerator to chill for about 1/2 hour.

Once chilled and firm, sprinkle slightly with gf flour and roll out to 3/16" (slightly less than 1/4") with a rolling pin. Cut into rounds with a cookie cutter or biscuit cutter.

Mix together cinnamon and sugar topping and dip tops into mixture. Liberally cover sides and top with the sugar.

Place on cookie sheet lined with parchment paper and bake for 10-12 minutes.

i roll mine out to 1/4" for a thicker cookie. This are soft and extremely good especially if you like cookies that aren't too sweet.
