1 2/3 cup cooked mashed sweet potato (approx. 2 medium size)
2 medium size carrots cooked and mashed
1 stick melted butter
1 2/3 cup sugar (I use Splenda)
3 Tbsps. flour
2 eggs
1 can 6 oz. Pet evaporated milk
1 Tbsp. vanilla
2 tsp. cinnamon
1 tsp. pumpkin pie spice (optional)

Directions:
Directions:
Preheat oven to 350.
Mix the flour, sugar, cinnamon, pumpkin pie spice together. Make a hole in the middle. Mix the melted butter, potatoes, carrots, milk, eggs and vanilla together in a separate bowl. Pour the wet mixture into the hole made in the flour mixture. Mix well.
Pour into one single unbaked pie crust.
Bake for 1 to 1.5 hours or until inserted knife comes out clean.
Serve with whipped topping as desired.
