5 cups of mixed dried fruits (raisins, prunes, cranberries, etc.)
1 cup red wine
2 cups over proof Rum
1/2 cup Brandy

2 cups (4 sticks) butter
2 cups brown sugar
9 eggs
1 cup Molasses
1 tbsp lime juice
1 tsp vanilla extract
1 tsp almond extract
1/2 cup win
1 cup Rum
zest of one lime

2.5 cups flour, sifted
1 teaspoon allspice
3 teaspoon cinnamon
1 tsp clove
1 tsp nutmeg
1 tsp corriandor
Pinch of salt


*Cut Fruit and let sit in rum, win and brandy for at lest 3 days

Preheat Oven to 350 degrees F (175 C) Grease and flour 2 - 9 inch round cake pans or cup cake pans

In a large bowl, cream together the butter and suage until light and fluffy, Beat in eggs, then add rum, lime juice, wine, mixed fruit and molasses. Sift together flour baking powder, nutmeg, allspice, cinnamon, and salt. Fold into batter, being careful not to over mix. Pour into prepared pans.

Bake in preheated oven for 80 to 90 min, or unitl a tooth pick comes out clean. Let cool 10 min before removing from pan
