Chicken pieces (about 4 lbs) cut into drumstick and thigh sections
1 1/2 c distilled white vinegar
3 garlic cloves, crushed
2 bay leaves
½ T whole black peppercorns, crushed lightly
¾ c soy sauce
3 T vegetable oil

Cooked rice as an accompaniment

Brown chicken pieces in oil. Add vinegar, garlic, bay leaves, peppercorns and 1 c water. Bring to boil, cover and simmer for 20 minutes.

Add soy sauce and simmer the mixture, covered, for 20 more minutes or until sauce is reduced to about 1 cup.

Remove bay leaves and skim fat from surface. Pour into serving dish and serve with rice on the side.

Adobo is a traditional dish from the Philippines. Granddaughter Megan’s mom, Fhe Murphy, is a fantastic cook. I’m sure Fhe makes a much better version of this classic than I do! But I always enjoy trying my hand at it for Megan, to mark special occasions in her life. This recipe is my version.
