3/4 cup butter
1 cup sugar
2 eggs
1/2 tsp vanilla
2 1/2 cups flour

2 sticks unsalted butter, softened
3 cups confections' sugar
2 tsp pure vanilla extract

Directions:
Cookies: Cream butter, sugar and eggs. Add vanilla. Mix in dry ingredients. Chill for one hour.

Roll out approx. 3/8 in thick and cut into desired shapes. Place on ungreased cookie sheet and bake at 400º for 6-8 minutes. Do not brown. Cool slightly before sliding off the cookie sheet so they don't break.
Frost with butter cream icing with food color added.

Frosting: Beat cream cheese, butter, and 1 cup of sugar with a mixer on medium speed until combined. With machine running, add 2 cups confectioners sugar, 1/2 cup at a time, beating well after each addition. Add vanilla, and beat until pale and fluffy, about 4 minutes more.

Note: Can be made ahead of time and refrigerated for up to 3 days. Bring to room temperature and beat before using.

Personal Notes:
These cookies held together so well that Grandma would take a needle and thread and run through them and we would hang them on the Christmas tree as ornaments. Every day I would get one of them right off of the tree.
