19 oz. drained pineapple chunks
2 cups green grapes
(2 cups min. marshmallows)
2 eggs
2 tbsp. white sugar
1/2 cup water
1/2 tsp. grated lemon rind
1/4 cup lemon juice
1 can coconut milk- refrigerated

Directions:

In top of a double boiler or in a heavy pan, mix together:
2 eggs lightly beaten
2 tbsp. white sugar
1/2 cup water
12 tsp grated lemon rind
1/4 cup lemon juice
Place over low heat and cook, stirring constantly until thickened. Place in small bowl with lid. Refrigerate. * can be made a day ahead.

Remove the cold can of coconut milk from fridge. Empty solid contents in mixing bowl and beat on high until cream is solid.

In 1977 this was served at our wedding as it was a classic festive salad the day,
Today a few ingredients have been changed but it can be still be served at dinner- as a dessert or for brunch. As it is made ahead, it is very convenient for the hostess. One can add berries just before serving.
