Flour
Eggs
Parmesan
Meat (or marinara) sauce

Directions:
Directions:
For every pound of Ricotta cheese, add 1 egg, and combine
Add a little grated parmesan cheese
Add flour until dough is stiff and still moist
Knead and combine thoroughly; roll into a log
Split in half, roll into a smaller log and repeat until the thickness of a finger; sprinkle with flour and cut into small nibs
Take each nib, and use the pointer and middle finger to pull back until it curls over creating a clam like shape
Boil salted water, add cavatelli; use slotted spoon to remove the pasta that rises to the top to prevent overcooking.
Toss with sauce; top with grated parmesan cheese
