2 Garlic Cloves-thinly sliced
2 lg Onions-thinly sliced
2- Pepper (Green or Red) --seeded and sliced
1 Eggplant-sliced 1/4 inch thick
2 Zucchini- thinly sliced
3 Tomatoes- thinly sliced
1 tsp Salt
4 tsp Olive Oil

Directions:

Saute--Garlic and Onion for about 8 min.
Add----Peppers, Eggplant and Zucchini
Saute--Very gently for 8 min.
Add Tomatoes and stir
Cover tightly and simmer for 10 min.

Serve cold.

Hot ---serve over cooked rice, top with a poached or fried egg on top
