CORN CHOWDER


Serves 8-10 hungry
2 lbs. Bacon eaters
2 C chopped onion
2 C chopped green pepper
2 C chopped red pepper
3 C fresh tomatoes, diced
½ C tomato juice
3 cans whole kernel corn
2 C diced ham (3/4 lb)
1 t oregano
1 t thyme
1 t sweet basil
½ t cayenne pepper
1 t black pepper
2 C milk
¼ C oil
¼ C flour
1 pint half and half

Directions:
Directions:
Fry bacon until crisp. Drain. Sauté onions, and peppers until limp. Add bacon. Into ½ C bacon drippings add corn, tomatoes, tomato juice, seasonings, ham, onions, peppers, and bacon.
Cook for 30 minutes.

In a separate pan bring 2C milk to a boil. In still another pan make a roux of flour and oil…cook until brown. Add the roux to the corn mixture and blend well. Add hot milk and cook for 25 minutes. Add half-and-half before serving. Heat until hot.
