PIE FILLING:
1 ½ C sugar
1/3 C cornstarch
1 ½ C water
3 egg yolks, slightly beaten
3 T butter
4 T lemon juice
1 ¼ T grated lemon rind


MERINGUE:
3 egg whites
¼ t cream of tartar
6 T sugar

Directions:
Directions:
In a saucepan mix the sugar, and cornstarch. Gradually add the water. Cook over moderate heat, stirring constantly, until mixture thickens and boils. Boil for 1 minute. Slowly stir half the hot mixture into the egg yolks. Then beat the egg mixture into the hot mixture in saucepan. Boil 1 minute longer, stirring constantly. Remove from heat. Continue stirring until smooth. Add remaining ingredients. Pour into prepared 9” pie shell. Cover with meringue. Bake at 400 º for 8-10 min. until a delicate brown.

Meringue:
Beat whites with cream of tartar until frothy. Gradually beat in sugar, a little at a time. Continue beating until stiff and glossy. Pile onto pie, being careful to seal the meringue onto the edge of crust to prevent shrinkage.
