16 oz package frozen hash brown potatoes thawed
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon granulated garlic
8 eggs
1/2 cup milk
1/4 lb chopped cooked ham
10 grape tomatoes cut in half
5 green onions thinly sliced
1 1/2 cup shredded cheddar cheese

Directions:
Directions:
Cook hash browns according to package directions.
Add salt pepper and garlic, mix. Set aside
Beat eggs with milk
Add ham, tomatoes and onions
Over medium heat, stir egg mixture into hash browns; stir quickly to scramble
As eggs begin to get firm, add cheese and continue to stir until eggs are cooked and set.
Serve in 4 (6 inch) cast iron skillets

My mom used to put some shredded cheese on top of each skillet and put under broiler for a couple of minutes to make melty top.
