6 6 oz beef tenderloin fillets
1 t salt
1 t ground pepper
1/4 c butter (divided)
1 tbls olive oil
1 8 oz pkg of fresh mushrooms finely sliced
1/2 c dry sherry
1/2 c whipping cream

Garnish with flat leaf parsley finely chopped

Sprinkle beef evenly with salt and pepper
Melt 2 tbls with oil in large skillet over med high heat, add steaks and cook 7 minutes, turn and cook 2 minutes or to desire doneness. Remove steaks from skillet reserving the drippings in pan, keep steaks warm.
Melt remaining 2 tbls butter in skillet over med-high heat, add mushrooms and sauté 3 to 4 minutes, then remove mushrooms.
Add sherry and whipping cream to skillet, stir constantly over high heat 1 to 2 minutes until thickened. Stir in mushrooms. Serve mixture over beef and garish with parsley if desired.
