1 c Cheese, grated (I prefer sharp cheddar or mexican mix)
1/3 c Milk
1 Egg
2 T Taco Seasoning
1 c Cream Style Corn (14-3/4 oz)
1 box Jiffy© Corn Muffin Mix (8-1/2 oz)
1 can Chopped Green Chiles (4 oz)
1 can Red Enchilada Sauce (10 oz)
2 Chicken Breasts (cooked, shredded)
Salt & Pepper to taste

Directions:
Directions:
Preheat oven to 400º. Grease 9"x13" baking dish.
In a large bowl stir together 1/4 c cheese, milk, egg, seasoning, corn, muffin mix and green chilies.
Stir until just combined.
Pour into the prepared pan and bake for 15 minutes or until just set.
Remove cornbread mixture from the oven and pierce all over with a fork.
Pour the enchilada sauce over the cornbread.
Top with the chicken and remaining cheese (I use a little extra cheese).
Return to oven for another 15 minutes.
Serve with salsa and sour cream if desired.
