1 lb ground beef
1/2 onion, diced
2 hot peppers, diced (any kind)
1 can chili beans (or whatever you have)
1 can green chilies
2 cans diced tomatoes (10-14 ounces each) Southwest style is best, but any will do
1 tsp cumin (or more to taste)
1 tbsp chili powder (or more to taste)

I use a cast iron pot for mine, but any large saucepan will work.
Brown ground beef and drain if necessary.
Add chopped onion and pepper and saute til translucent.
Add remaining ingredients and stir to combine.
Simmer until flavors have melded nicely, at least 30 minutes, stirring occasionally.

I have found that if you make this several hours ahead of time (or even the day before), turn off the heat and let it sit for awhile, then reheat when ready to eat, it makes a lovely sauce on its own and tastes better than if you eat it right away.
