1 egg white
Pinch of salt
1 teaspoon lemon juice
1 1/2 cups sifted powdered sugar

Combine ingredients in small bowl. Beat with electric mixer or rotary beater until light and fluffy. Mixture should stand in stiff peaks. If necessary for desired consistency, add a little more sugar and continue beating. Color with food coloring if desired. When not in use, keep icing covered with a damp cloth or airtight cover. It may be kept at room temperature several days. Force through decorating tubes for outlining or making designs. Icing dries quickly.
SUGGESTED TIPS
Tip: Artistic Touch—For prettier and softer colors, when using food coloring, start with just a small amount. If coloring pink, use a little red and add a tiny bit of yellow; when coloring yellow add a touch of red. Use a toothpick to add a tiny touch.
Tip: When baking recipes call for butter or margarine, use the regular type. Do not used whipped, diet or soft products. Allow regular butter or margarine to soften by leaving it at room temperature.
Tip: Most cookies should be stored airtight and kept in cool place. They may be refrigerated or frozen for long keeping. For freezing, a moisture proof wrap or container is necessary.
