1 cup brown sugar
1 teaspoon heaping, cinnamon
½ teaspoon nutmeg
1 teaspoon ground cloves
1 cup leftover coffee, cooled to room temp.
⅓ cup canola oil
2 cups seedless raisins
2 cups flour
1 teaspoon salt
1 teaspoon baking soda
½ teaspoon baking powder

Combine brown sugar and spices in a large saucepan. Add coffee, canola oil and raisins and mix well. Bring to a boil and boil 3 minutes. Remove from heat and let cool, stirring occasionally, until you can hold your hand on the bottom of the saucepan comfortably. Meanwhile, stir together flour, salt, baking soda and baking powder. When liquid ingredients are cooled, stir in dry ingredients and pour into a greased loaf pan (for slices) or 9 "x13" pan (for squares.) Bake at 325 degrees for about 35 minutes, until a toothpick inserted in the center comes out clean. Cool in pan, then slice and serve.
Wrap leftovers tightly to preserve moisture. Remainder can be refrigerated.

Grandmother's original version used brown sugar, cold coffee and lard, a mere quarter tsp. of cinnamon and 2 full cups of raisins. Mom's somewhat lighter version used granulated sugar, water and salad oil, a heaping teaspoon of cinnamon but a single cup of raisins. I've combined the best of both.
