1/3 cup butter
1/3 cup all purpose flour
1/3 cup onion, chopped
1/2 teaspoon salt
1/4 teaspoon pepper
1 3/4 cup vegetable broth
2/3 cup milk
2 cups faux chicken
10 ounces (package) frozen peas and carrots
2 frozen and uncooked pie crusts

Directions:
Preheat oven to 400 degrees. Heat butter over low heat until melted. Blend in flour, onion, salt, and pepper. Cook over low heat, stirring constantly, until mixture is smooth and bubbly. Remove from heat. Stir in vegetable broth and milk. Heat until boiling, stirring constantly. Boil and stir for one minute. Stir in faux chicken and vegetables.

Prepare crust for bottom and top of pie. Place one pie crust in an ungreased pie plate. Pour ingredients into crust. Lay top crust over filling, and cut slits for steam release.

Bake, uncovered, at 400 degrees for 30 to 35 minutes.
