2/3 cup shortening
2 and 2/3 cups sugar
3 cups shredded zucchini (about 2 medium)
4 eggs
2/3 cups water
3 and 1/3 cups all purpose flour
2 tsp baking soda
1 and 1/2 tsp salt
1/2 tsp baking powder
1 tsp ground cinnamon
1 tsp ground cloves
2 tsp vanilla
2/3 chopped nuts
2/3 cup raisins

Directions:

Heat oven to 350º. Grease bottom only of 2 loaf pans, 9X5X3 inches. Mix shortening and sugar in large bowl. Add eggs, zucchini and water. Blend in flour, baking soda, salt, baking powder, cinnamon, cloves and vanilla. Stir in nuts and raisins. Pour into pans. Bake until wooden pick inserted in center comes out clean, about 60-70 minutes; cool slightly. Loosen sides of loaves from pans; remove from pans. Cool completely before slicing. To store, wrap and refrigerate no longer then 10 days.

Delicious recipe. Great when first made, but even more moist when frozen for some time. You can omit nuts and raising if you'd like.
