Ingredients: 6 large or 10 medium sweet potatoes (Louisiana yams are best) cooked
Mix: 3 eggs beaten 1/4 cup granulated sugar 1/4 cup light brown sugar 1/4 cup butter 1/4 - 1/2 tsp salt to taste 1/2 tsp cinnamon 1 tsp vanilla VERY optional suggestion from Papa - 1 oz (jigger) Jack Daniels!
3/4 pkg miniature marshmallows reserved for topping

Directions: |
Directions: Cook potatoes whole in skins in boiling water until done (soft to a fork stick). Peel potatoes while hot. Add butter and stir until melted and potatoes are mashed.
Mix remaining ingredients (other than marshmallows or toppings) and stir well. Add to potato mixture and beat mixture at a medium speed for 3 minutes. (Do not scrape beaters into mixture as strings collect on the beaters) If potatoes are too stiff, you can add evaporated milk one Tbs at a time.
Pour into 10 X 10 greased baking dish. Bake at 350º for 40 minutes till done. Then top with marshmallows by pressing down slightly into the cooked mixture. Return to oven until marshmallows are lightly brown - about 10 minutes.
May top with pecans or brown sugar instead of marshmallows. Freezes well prior to cooking |

Notes: Traditional Family Recipe This family favorite is a traditional Thanksgiving or Christmas dish. I think the small children like the marshmallows best! My grandmother ran the sweet potatoes through a metal colander as those grown at that time had lots of strings. Lucky for us, the sweet potatoes of today are practically stringless so I skip this step. Mashed sweet potatoes are Miles' favorite! Love to all, Mimi
