1/4 lb. bacon, diced
1/2 c. diced peeled potato
1/2 c. diced celery
1/2 tsp. sweet paprika
1 1/2 c. chicken broth
1/4 tsp. dried thyme
1 c. (4 oz) shredded cheddar cheese
1/4 c. frozen peas - optional
dash garlic powder
dash celery seed
dash parsley
freshly ground white pepper

In heavy skillet, fry bacon until crisp. Remove from an and set aside. Drain off all but 1 tsp. fat. Add potato and celery to bacon fat and cook until lightly browned - about 5 minutes, stirring occasionally. Add paprika and cook 1 minute. Add chicken broth and thyme and simmer 10 minutes. Stir in cheese, a handful at a time, stirring each batch until melted. Add peas and reserved bacon and heat through. Season to taste with white pepper, garlic, celery seed and parsley.
