1 16oz pkg dried green spit peas, rinsed
1 meaty ham bone, plus some diced ham if available
1 pk baby carrots
1/2 onion ( if small use a whole onion)
2-4 ribs of celery plus leaves- chopped
1-2 cloves of garlic minced
1 bay leaf
1/4c parsley or 2 tsp dried parsley
6c chicken broth
salt and pepper to taste

Directions:
Directions:
layer ingredients in crock pot in order given ; pour chicken broth over layers. DO NOT STIR. cover and cook on high for 4-5 hours or on low for 8-10 hours until peas are very soft and ham falls off of the bone. Remove ham and bones and bay leaf. with an immersion blender blend all ingredients to thicken. add ham- chopped back into soup.

Freezes well
