Cake:
1 1/2 cups Crisco oil
2 cups sugar
2 cups self-rising flour
4 eggs well beaten
2 tsp. cinnamon
3 cups grated carrots
1 cup chopped pecans

Icing:
1 8-ounce package cream cheese
1/2 stick margarine
1 box confection sugar
1 tsp. vanilla

Directions:
Directions:
Cake: Mix sugar, oil and eggs until mixed well. Sift flour and cinnamon together and add to sugar mixture. Add grated carrots and pecans. Bake for 35-40 minutes at 350º. Test doneness by inserting toothpick in center. Makes 3 layers.

Icing: Blend all ingredients well and frost when cake is completely cool.

I would probably used 2-3 batches of icing for this cake. Icing makes a cake!!!!!
