2 1/2 cups vanilla wafer crumbs
1/2 cup butter, melted

Filling:
4 8-ounce packages cream cheese, softened
1 pint sour cream (2 8-ounce)
1 1/2 cups sugar
4 eggs
1/8 tsp. salt
1 tbsp. fresh lemon juice
1 tbsp. vanilla
1 tbsp. all-purpose flour

Directions:
Directions:
Crust: Stir together crumbs and butter until moist. Press mixture on bottom and 3/4 of the way up the sides of a 10-inch springform pan. Refrigerate while preparing filling.

Filling: Combine cream cheese and sour cream. Beat until smooth and creamy. In a separate bowl, combine sugar and eggs. Beat well. Combine egg mixture and cream cheese mixture. Blend well. Add salt, lemon juice, vanilla and flour. Mix well. Pour mixture into crust. Bake at 350º for 55-65 minutes (55 for creamy; 60-65 for drier.) Cool in pan 3 hours. Refrigerate overnight before removing sides of pan.

Tom told me to make the "Better than Sex Cheesecake" in the Second Round Tea Time Cookbook. I found the recipe - finally - as it is call "Heavenly Cheesecake". It is just that - soooo good! Best ever - I eat it plain with no toppings.(I spray pan with Pam Olive Oil - and sometimes use parchment paper on bottom if I want to place finished product on a plate.)
