Ingredients: 2 tbsp oil 1 1/2 lbs ground pork 1 1/2 lbs ground beef 1 large onion 2 medium potatoes peeled and chopped 1 1/2 cups water 1 cup soft bread crumbs 2 tsp sage 1 1/2 tsp salt 1/2 tsp thyme 1/2 tsp ground cloves 1/2 ground pepper 1/4 tsp cayenne pepper

Directions:Pour oil into very large pot over low heat, add all remaining ingredients except pastry. Mix well. Cook, stirring occasionally for about 30 min. or until most of liquid is absorbed, but mixture is still very moist. Taste and adjust seasoning. Let cool. Line pie plates with pastry. Add filling and cover with top crust. Seal edges and cut slits in top. Bake in 375º oven for 30 to 35 minutes or until crust is golden brown. Makes enough filling for 4 or 5 thin 8 inch pies or 2 or 3 thick 9 inch pies |

Notes: This is you Nana's old tortiere recipe that we grew up with when we celebrated the "Reveilion" each Christmas Eve. She worked long and hard to prepare these! I have followed the tradition every year since I was 20 years old. Should you decide to do the same you will be baking pies from a recipe that is nearly 100 years old, as it was Papa's mother that Nana got the recipe from! Enjoy :)
The only thing I did differently is that I cooked and mashed the potatoes before adding them to the mixture. Otherwise I found they stayed somewhat uncooked.
