4 medium red or golden beets, washed and peeled
1 T. olive oil
1/2 c. olive oil
1 T. Balsamic vinegar
1 can chickpeas, rinsed and drained
2 T. tahini (sesame seed paste)
2 garlic cloves
1 T. lime juice

Directions:
Directions:
Cube peeled beets and place on foil-lined baking sheet. Drizzle 1 T. olive oil and 1 T. Balsamic vinegar over beets. Toss to combine. Cover with another sheet of foil. Roast 40 minutes at 425º. Let cool slightly.

Place beets, chickpeas, tahini, garlic and lime juice in a food processor and process until smooth and well-blended. While processing, slowly add 1/2 c. oil to beet mixture. Chill and enjoy with pita bread or vegetables.
