1 c oil
1 c flour
2 onions, chopped
2 bell pepper, chopped
4 stalks celery, chopped
6 cloves garlic, minced
4 qt chicken broth
2 whole Bay leaves
3 tsp Creole seasoning
1 tsp thyme
Salt and Pepper to taste
3 lbs chicken, cut into bite-sized pieces
2 lbs andouille sausage, cut into bite-sized pieces
Bunch of green onion tops
2/3 c chopped parsley

Directions:
Directions:
Season chicken with salt, pepper and Creole seasoning and brown quickly. Brown the sausage, pour off fat and reserve meats. In a large heavy pot, heat oil cook flour, over medium heat, stirring constantly. Until roux reaches medium to dark brown color. Add vegetables and stir quickly, continue to cook 4 minutes, stirring constantly. Add broth, seasonings, chicken and sausage. Bring to a boil, reduce heat and cook for 1 hour. Serve over rice and top with green onion and parsley
