1-bag large pasta shells
5-links italian sausage
2- cups fresh spinach leaves
1-cup chopped seasoning (onions, bell pepper & celery)
1- cup ricotta cheese
1 1/2 cup favorite red Sauce (I like a tomato basil sauce mixed with a little alfredo sauce)
1/2 cup grated parmesan
1tsp red pepper flakes

Preheat oven to 350º
Boil bag of shell pasta rinse and drain. Do not over boil!
Remove italian sausage from casing and fry down in skillet. Remove grease. Add chopped seasoning and fresh spinach until wilted. Sprinkle with some of the parmesan.Remove from heat and fold in ricotta cheese. Let mixture cool for a bit. Stuff shells generously and place in a casserole dish coated with a small amount of olive oil. In a small saucepan combine the two sauces and add a little parmesan & red pepper flakes. Heat for about 10-15 minutes on medium heat. Pour sauce over stuffed shells sprinkle remaining parmesan and bake for about 30-45 minutes.

The first time I made this I did not have ricotta on hand. I googled how to make ricotta cheese! I was so amazed at how easy this was and it was like a kitchen science experiment! You should try it!
