1 lb. seedless dates
1/2 c. sugar
1/2 c. water

1 c. shortening
1 c. brown sugar
1 c. granulated sugar
3 eggs
1 tsp. baking soda
1 tsp. vanilla
1/4 tsp. salt
3 c. flour
Chopped nuts (optional)

Directions:
Directions:
Cook dates, water and 1/2 c. sugar slowly until it forms a thick syrup.

Cream together the shortening and sugars. Add eggs, combining well. Mix together the soda, vanilla, salt and flour. Add to egg mixture to make stiff dough; divide into 3 parts on wax paper.

Roll or pat to 1/4" thick. Spread on date mixture. Sprinkle with chopped nuts (optional). Roll up and chill in icebox overnight. Slice in 1/2" thick slices; place on ungreased cookie sheet lined with floured wax paper. Bake at 400º for 10-12 minutes. Makes about 45 cookies.
