Chicken breasts, butterflied
2 egg whites
1 cup cornstarch
2 tsbp oil
½ tbsp garlic
¼ cup sugar
1 cup water
2 tbsp lemon juice
½ tbsp sesame seed oil
1 tbsp red wine vinegar
2 tbsp cornstarch
Yellow food colouring

Dip chicken in egg whites and cover in cornstarch. Cook 12 minutes or until cooked in wok with sesame and regular oil. Drain on tea towel.

Saute garlic (add ginger if desired) in oil. Add sugar, water and lemon juice and boil. Add rice vinegar and sesame oil. Slurry cornstarch and add to thicken. Add yellow food colouring to desired colour.

Slice diagonally and serve on a bed of glass noodles with julienne peppers and leek.
