2 lb lean ground beef
1 small onion, finely chopped
1 zucchini
1 clove garlic
2 cups ricotta cheese
sheets of fresh lasagna
2 cups of fresh spinach
1 cup of shredded mozzarella cheese
1/2 cup of shredded parmesan cheese
1/2 cup of asiago cheese
2 1/2 cups of spicy red pasta sauce

Directions:

In a saucepan, heat oil, cook garlic and onion and chopped zucchini. Set aside and throughly cook ground beef. Stir the zucchini with the beef, add pasta sauce and heat. Add chopped spinach to the ricotta. Mix the other three cheeses together.

Cover the bottom of a 9 x 13" baking dish with half of the prepared meat and sprinkle with the three cheese mixture. Place lasagna sheets on top to cover. Spread the ricotta spinach mixture evenly over the noodles. Place another layer of lasagna sheets. Pour the rest of the meat mixture and top with the remaining cheese.

Cover and bake at 350ºF for 45 minutes. Let stand for 10 minutes before serving.
