2 c hot cooked rice
1 pkg taco seasoning mix
4 boneless skinless chicken breasts cut into 1" pieces
2 T oil
1 - 11oz can corn
1 c salsa or picante sauce
1/3 c apricot preserves
1/4 c water
1 T chopped cilantro
1 T lime juice

Directions:
Directions:
In large ziplock bag combine taco seasoning and chicken pieces. Shake to coat well. In large skillet cook chicken in oil until no longer pink. Add corn, salsa, preserves, water, cilantro and lime juice. Mix well. Bring to a boil. Reduce heat to medium and cook 5 minutes or until heated through. Serve over hot cooked rice.
