Ingredients:
Ingredients:
1 stick of butter
2 cups diced onion
2 cups diced celery
2 cups diced mushrooms mix a few different types for great flavor.
2 tablespoons fresh sage chopped up
2 tablespoons fresh thyme chopped up
1 tablespoons fresh rosemary chopped up
salt and pepper to taste
2 eggs
1/4 cup parsley.... adjust according to your taste.
3 cups turkey broth...I use "superior touch" better than bouillon - turkey
16 cups dried bread cubes. This will usually be two bags

Directions:
Directions:
The day before I chop the onions, celery and mushrooms in food processor or by hand and then put in a large ziplock bag and let sit over night in the fridge.

Preheat oven to 350 degrees. Melt I stick butter in a large skillet over medium heat. Add the onion, celery, mushroom mixture and the sage, thyme, rosemary and salt and pepper cook about 15 minutes until veggies are tender.....the house should start to smell yummy!

Add the 3 cups of Turkey broth to the pan and simmer 5-10 minutes.

Butter or spray a large baking dish really well, add the dried bread crumbs. Mix the two eggs with the parsley whisk it with a fork to mix then pour over the bread crumbs and mix it up a bit - I use my hands. Then add the vegetable/broth mixture and stir or mix well. Top with some slices of real butter the more the better!

Cover and bake 30 minutes, then uncover and bake until top is golden brown stir it up a bit and cook another minutes or so to have a few crispy pieces.
