Ingredients: 1 1/2 cups all natural creamy peanut butter or nut butter of your choice 1/2 cup honey 2 tsp vanilla 2 eggs 1/2 tsp baking soda Chocolate bar of your choice or chocolate chips

Directions:Preheat oven to 350 degrees. In a large bowl mix all ingredients but the chocolate bar or chocolate chips. Once these are combined, add in desired chocolate. Grease a pan with nonstick spray. These cookies are very sticky, so wet hands before balling them up or use a cookie scoop. Place them on the pan in 2 inch balls about 2 inches apart, patting the tops down as you place them. Bake for 8-10 minutes or when the edges begin to brown. They will not yet look good but let them sit out on the sheet for 5 minutes and they will continue to cook. Remove after 5 minutes and enjoy. |

Notes: These cookies are allergy friendly- and for people allergic to nuts, peanut butter can be substituted with sunflower butter which is what I do for my friend who is allergic to nuts and gluten. These have a cake-like consistency, but are super delicious, and free of bleached flour and large amounts of refined sugar. Whenever I make them, they hardly last a day.
