3 - 4 lb beef roast
1 medium onion, coarsely chopped
1 cup baby carrots
1/2 cup celery, sliced
4 medium potatoes, quartered
1 envelope French onion soup mix
1 clove garlic, minced
1 Bay leaf
1 can cream of mushroom soup

Directions:
Directions:
Place onions, carrots, and celery in crock pot. Add the potatoes, then place the roast on top. Add the minced garlic and sprinkle the French onion soup mix over the roast. Place bay leaf on top of roast & cover. Cook on low heat for about 8 hours.

Discard the bay leaf and add the cream of mushroom soup for a thicker gravy. Let it heat through for a few minutes & it's ready to serve.

You can substitute stew meat or cut up sirloin for the roast & turn this into beef stew. Add some canned corn and/or green beans when you add the cream soup.
