1 cup cooking oil
2 cups sugar
3 beaten eggs
2 1/2 cups all purpose flour
2 tsp baking powder
1 tsp baking soda
1 tsp salt
2 tsp cinnamon
4 cups chopped apple

ICING:
8 oz cream cheese
1/2 cup butter
1 box powdered sugar (3 3/4 cups)
2 tsp vanilla
1 cup TOASTED pecans (toast whole and then break into pieces)

OR for a variation of this recipe:

Bake cake in 9x13 and top with Brown Sugar glaze of 1 cup brown sugar, 6 T butter, 1 tsp vanilla, 2 T cream - combine and cook over medium heat stirring 3-5 minutes. Spoon over cake while cake is hot. Either way - a winner!

Mix oil and sugar and then add eggs. Sift dry ingredients and add to this mixture. I mix with a wooden spoon. Then add chopped apples. Pour into three cake pans (greased, floured and waxed paper) and bake about 20 minutes (til golden and toothpick comes out clean) Prepare icing and ice when cake cools. (I toast my pecans in a skillet with a little butter - stirring constantly and removing to a plate once done (or they will continue to cook in skillet!)

This cake was a favorite for James and for DeeDee. I used to make this cake for both of their birthdays! As DeeDee got older, she really loved having this special treat! We would try to 'pack a party' and take supper (usually Popeyes -which she and Motsie loved!) and bake this cake. She always appreciated it and loved being with everybody. I can't make this apple cake without thinking of James and DeeDee!
