1 1/4 cup white sugar
1/8 tsp. salt
1 tsp. lemon rind
¼ cup butter
6 tbsp. cornstarch
2 cups boiling water
2/3 cup lemon juice
3 eggs

Directions:
Directions:
Mix sugar, cornstarch and salt. Add boiling water and lemon rind. Cook over heat, stirring constantly, until thickened. Continue to cook for 20 minutes. Remove from heat and add butter. Pour over egg yolk mixture that has been blended with the lemon juice. Beat until smooth and well blended. Return to heat and allow to become steaming again. Pour into pie shell and cover with meringue. To make meringue beat the egg whites stiff and gradually add 6 tbsp. sugar. Bake at 350° for 10 to 12 minutes.
