CRUST

3 cups graham cracker crumbs
1/4 cup soft butter
1/3 cup sugar

FILLING

1 envelope unflavored gelatin
1/4 cup hot water
2 egg yolks
1/3 cup milk
1 2/3 cup sugar
1 lb. farmer style cottage cheese
pinch of salt
2 egg whites (beaten stiff)
1 pt. whipped cream (whipped stiff)
1 T sugar (added to whipped cream)
1 teaspoon vanilla

Mix crust ingredients together. Spread mixture on bottom and sides of one spring form pan setting aside 1 cup to sprinkle over the top of cheesecake.

Dissolve gelatin in hot water and set aside.

In a saucepan mix egg yolks and milk and bring to just a boil stirring constantly (you do not want to scramble the eggs). Add sugar and dissolve. Add gelatin. Cool mixture in refrigerator until set.

In large bowl add cottage cheese, salt, beaten egg whites. Mix and add to gelatin mixture. Add vanilla. Add whipped cream and fold in. Pour over graham cracker crust. Sprinkle with remaining cup graham cracker crumbs. Refrigerate and chill 24 hours.

We usually make a double recipe and use a large spring form pan. You can also use muffin tins or custard cups and make individual cheese cakes with any left over mixture.
