cup uncooked rice
2 eggs separated
tsp. salt
3 tbsp. sugar
2 cups milk
cup sugar
1 tsp. vanilla

Directions:
Directions:
Wash rice and add to milk. Cook in double boiler 1 hour, covered. Beat egg yolks and add sugar and salt. Add to hot mixture. Cook 2 minutes, stirring constantly. Remove from heat and cool slightly. Stir in vanilla. Beat egg whites until stiff and gradually beat in 3 tbsp. sugar. Fold into rice custard
