coarse salt
Olive oil

Directions:
Directions:
Preheat oven to 200°. Arrange tomatoes on baking sheets, cut side up and sprinkle with salt. Leave in oven for up to 7 hours. After 5 hours start to check and remove the tomato pieces as they become dry and wrinkled but before they burn. Dip in vinegar and layer in glass jars. When filled, cover with olive oil. Add herbs and seal.
