1 T all-purpose flour...
14 t Kosher salt...
1/4 t fresh ground pepper...
8 large eggs, slightly beaten...
1/4 cup Parmesan cheese, grated...
1 T extra-virgin olive oil...
1 large leek, trimmed, rinsed well and sliced thin....after slicing I again run leek through the water, leeks get very sandy from the ground...
1 large garlic clove, minced...

Preheat oven to 350º....
Combine milk, flour, salt, pepper, egg and cheese in a medium bowl, stirring with a whisk...
Heat oil in a large pan, 10 to 12 inches, ovenproof, over medium heat...
Add the leeks, once hot, cook leeks until tender and browned just a bit ...
Add the garlic to the leek and cook 45 seconds, now add the egg mixture, stir gently to distribute the leeks evenly, cover skillet, reduce heat to low and cook until eggs are partially set, about 5 minutes...
Uncover skillet and bake in oven until eggs are set, about 10 minutes or so...
Loosen edge of eggs and slide them onto a large plate or cutting board...
Slice into 6 to 8 portions...
