2 C Unsweetened Coconut Flakes
1/3 C Liquid Sweetener- (Agave, maple syrup, corn syrup etc)
1/4 C Powdered Sugar
2 Tbs Coconut Oil
1/4 tsp Salt
8 oz of Bittersweet Chocolate

Directions:

First Mix together the Unsweetened Coconut, liquid Sweetener and salt. Mix well. Then add in the powdered sugar and mix again.
Finally add in the coconut oil. Mix well.

Using your hands mold the coconut mixture into a cylinder about 2 inches long and 1 inch thick. Put these onto a lined baking tray and freeze fro 20 minutes.

While centers are freezing, melt the chocolate over a double broiler or in the microwave to a soft and smooth consistency. One at a time roll the coconut fillings in the chocolate until completely covered. Set on a wire rack while chocolate is setting. Move quick enough so that your melted chocolate does not harden before dipping. Once the chocolate is set they will be ready to serve.

**Can add chopped almonds to top of chocolate after dipping them for an Almond Joy bar.
