1 lb. lentils like black crunch or white beans, cooked with broth unless cans
1 c. dry rice, cooked
1 t. olive oil
2 medium onions, coarsely chopped (any color)
1 c. diced carrots
1 potato, sweet or not
1/2 c. chopped celery
1 lb. andouille-style smoked sausage, sliced, or use a chicken or turkey smoked sausage or ground beef or pork
2 cloves garlic, minced
1 t. Cajun seasoning blend or red pepper flakes
1/4 teaspoon ground black pepper
Squeeze of lemon
