1 kilogram flour
2 pinches of salt
8 eggs, separated
4 tablespoons of suger
2 tablespoons of dry active yeast
1 liter of sparkling water
1 liter of milk
400 grams butter
4 tablespoons vegetable oil
2 shotglasses of rum
Raisins soaked in more rum (optional)

Beat egg whites to soft peaks. Set aside. Dissolve yeast in one-quarter of the lukewarm milk (100 degrees F). Add a sprinkle of the sugar if you’d like. Set aside until the mixture is bubbling and foamy, about five minutes.

Heat up half of the milk in a saucepan. Add the butter so it melts. Then add the rest of the milk and some of the water until the temperature is around 100 degrees F. Sift the flour together with the salt into a large mixing bowl. Make a well in the center and add the egg yolks, the yeast mixture, and the sugar. Add the milk mixture to the bowl while stirring with a wooden spoon. Add remaining milk and water. Mix until you have a smooth batter. Add the oil and the rum, just to combine. Fold the egg whites into the batter.

Cover with a clean towel and let rise for one hour in a warm spot. Stir down the batter and bake 1/2 cup at a time in a hot waffle iron. Sprinkle in some raisins, if desired.
