Bar Batter-

2 C Sugar
1/4 C Veg Oil
3/4 C Applesauce
3 Eggs or Egg Beaters equivelent
2 C Flour
1 tsp Cinnamon
1 tsp Salt
2 tsp Baking Soda
1/4 tsp Baking Powder
1 tsp Vanilla
2 Cups Shredded unpeeled Zucchini
1 Carrot Peeled and shredded or use pre-shredded from a bag
3/4 C Oats
1 C Walnuts

Frosting-

1 Package of Cream Cheese
2 C Powdered Sugar
1/4 tsp Almond Extract

Bar Batter-

Mix all ingredients except walnuts with beaters. When mixed well add in nuts and stir with fork. Bake in a very large bar pan at 350 º for approx 35-45 minutes. Let cool

Frosting-

Mix with beaters and spread over room temperature bars. Sprinkle additional walnuts over the top (Optional)
Cover with foil and Refrigerate for several hours before serving.
